What You Need

Ingredients & Equipment

  • 1 whole butternut pumpkin (or jap/kent), peeled and cubed

  • 1 brown onion, roughly chopped

  • 2 garlic gloves

  • 1 medium-sized potato (for extra creaminess)

  • 1 Litre vegetable stock

  • Olive oil

  • Salt & Pepper to taste

  • *Optional: cream or coconut milk

  • *Optional: Toasted seeds or fresh herbs to garnish

  • Large Baking Tray

  • Large Saucepan

  • Stick Blender


How to Make the Nurturing Roast Pumpkin Soup

  1. Preheat oven to 200ºC. Line a baking tray with baking paper.

  2. Toss the chopped pumpkin, onion, and garlic cloves with olive oil, salt & pepper. Roast in a tray for 25-30 minutes until golden and soft.

  3. In a large saucepan, add the roasted vegetables, potato, and vegetable stock. Simmer until the potato is soft (about 15-20 minutes).

  4. Blend until smooth using a stick blender. Add more stock or hot water to your desired consistency. (If you don’t have a stick blender, allow the soup to cool and use a food processor or traditional blender to liquify the soup.)

  5. Taste and season as required.

  6. Optional: Swirl in a dash of cream or coconut milk for a richer soup.

  7. Pour a serving into your Nurture companion mug and top with toasted seeds or herbs.
